Weekend Wrap Up (July 23-25)

Most things slow down and get lazy in the summer- it must be the heat, since people in the South move slower in general. Tom's cooking has been no different, so my posts are going to be shorter as a result.

This past weekend, Tom wanted to use up some ingredients. So here we have some jars of stuff:


Blueberry Jam, Chicken Liver Pate, Pickles


I was not home when these were made, but I still cleaned up the mess from them later! Also, I probably won't eat any of these, since I don't like pickles/cucumbers, and am not very fond of pate (at least not chicken liver- goose is another story). And I don't usually eat things that would require jam, so I can't really comment on any of these! All I know is we have a fridge full of jars of stuff.


Chicken Mole with Rice and Black Bean/Corn Salad


Tom made this mole for our Superbowl party back in January. He froze it, and we had it this past weekend. It was still good, it was actually spicier than I remembered (Tom thought so too). This is a chicken thigh, I'm not super crazy about eating dark meat, so I need it to be smothered in sauce or in taco/pie form if I am going to eat it. The green herbs on top were some Mexican herb that Tom got at the farmer's market. It was pretty strong flavored but it was ok in small amounts.


Homemade Pasta with Ratatouille


Tom has started making homemade pasta. I think this is maybe the third time he's made it, and it gets better every time. The ratatouille on top was pretty good. I don't like tomatoes, and I've had issues with eggplant, but I was able to eat and enjoy this. In the past, the eggplant has been too bitter for me, even though Tom's salted it and pressed it. Here he skinned it and it was much more palatable for me. I was able to mash up the tomatoes so they weren't as noticeable.

I know from this post, I sound pretty picky, and I am. Tom said he thinks I'm becoming less open-minded towards food, but I don't think that's fair. I do try new stuff, and then decide if I like it or not. I've tried tomatoes enough times to know that I'll probably always hate them (I can still taste a raw tomato in my mouth when I was forced to eat one as a kid, and then proceeded to gag on it). And I have been giving more seafood a chance these days. So I'm not picky, I just know what I like!

  1. Hey I do all of the dishes; it's not like I leave the kitchen a huge mess.

    The mole dish is sideways, needs to be turned a quarter-turn clockwise.
